Homemade Ranch Chicken Nuggets
I threw these together...
I cut up 2 very large chicken breasts into nugget pieces.
I grab a Ziplock bag and throw in a couple of cups of flour, a cup of breadcrumbs and tons of paprika.
Then I crushed a whole sleeve of garden vegetable Ritz crackers and added that to the flour/breadcrumb mixture as well as a packet of dry ranch mix.
I coated all the chicken pieces in milk (buttermilk would probably be better). Then coated in the flour mixture. Fry in a big pan with hot oil.
The kids loved it. I think the Ritz crackers were perfect touch to make this more crispy than my fried chicken normally comes out.
Sorry I don't have any measurements but I throw things together quite often and I made a big dinner that night. The baby was crying the whole time, and it was hard for me to concentrate. I felt like I was in Hell's Kitchen!
