Black Bean and Corn Salad
Black Bean and Corn Salad
2 Cups black beans (rinsed)
1/3 C squeezed lime juice
1 garlic clove, minced
1 tsp fine sea salt
1/8 tsp cayenne pepper
2 cans of corn
1 avocado, peeled, stone removed and cut into pieces
1 small red bell pepper, chopped
2 medium tomatoes, chopped
6 green onions, chopped
1 hot chile pepper or jalapeno pepper, chopped
1/2 c. chopped fresh cilantro
Rinse the 2 cans of black beans and pour into bowl. Combine the corn, avocado, bell pepper, tomatoes, green onions, chile pepper and cilantro. Mix well.
Put the lime juice in a bowl with olive oil, garlic, salt, and cayenne pepper and mix well. Pour into veggie bowl and mix well.
Refrigerate for a few hours and add avocado when ready to serve.
This is awesome with nacho chips.
