MUFFINS ~ MUFFINS ~ MUFFINS

I have one child that besides turkey bacon, will eat anything chocolate chip for breakfast. Chocolate chip granola bars, chocolate chip pancakes, chocolate chip muffins....

So I found a recipe to make a bulk mix of muffin mix to make her chocolate chip muffins. I thought it would be wonderful to have on hand. I already used the whole mix though because the kids and I came up with so many fun ideas.

Muffin Mix

8 cups of flour
3 cups of sugar
3 tbsp baking powder
2 tsp salt
2 tsp ground cinnamon
2 tsp ground nutmeg

I put the above ingredients in a large ziplock bag.

Then when you want to make muffins put 2 3/4 cups of mix in a bowl with:

1 cup milk (2%)
1 egg
1 stick butter, melted

Then choose whatever ingredients you want:

Chocolate chips
Blueberries
Cranberries
Banana
whatever else you can come up with.

Bake at 400 degrees for around 15 mins.

We made one batch of each of these

Chocolate chip (added 1 cup of chocolate chips)

Buttermilk Maple (substituted 1 cup of milk with 1 cup of buttermilk and added maple extract and sprinkled with brown sugar)

Chocolate chocolate chip and peanut butter (added 1/3 cup of cocoa, chocolate chips and 1/3 cup pb)

Mint chocolate chip (added green food coloring, chocolate chips and dash of peppermint extract)

  7. Oh my goodness. It's one in the morning, and I should be going to bed, but instead I'm looking at your delicious food and my stomach is grumbling - because, well, there's NOTHING better than muffins - they're totally one of my favorite, favorite foods! I (surprisingly!) have all the ingredients for this, and will totally be making it in the morning!
