Cheesy Buffalo Chicken

Signiture

4 boneless skinless chicken breasts (I used tenders)
1/4 tsp salt
1/4 tsp pepper
2 eggs
1/2 cup seasoned bread crumbs
3 Tbsp canola oil
1/4 cup buffalo wing sauce (can be made with red hot and melted butter)
1/4 cup provolone
1/4 cup mozzarella

Flatten chicken. Sprinkle with salt and pepper. In a shallow bowl, whisk eggs. Place bread crumbs in another shallow bowl. Dip chicken in eggs, then coat with bread crumbs.

In a large skillet over medium heat, cook chicken in oil for 7-10 mins on each side. Add wing sauce near the end of cooking. Turn to coat chicken. Sprinkle with cheese. Cook until cheese is melted.
